ROTW (recipe of the week) is a goal to test out one new recipe a week. I got off to a rocky start for 2024 because of work and life, so I have started with a simple one. This was something I threw together.
For this week, I tested out sweet ‘n spicy pickled carrots. I am doing an event in a few weeks and would like to top these over a yogurt sauce and curried blinis (that recipe to come also). I had pickled some jalapeños peppers in a sweet, pickling liquid. I used that as the base that I added the carrots and new pickling liquid to for this one.
For this recipe I took some apple cider vinegar, water, sugar, and whole peppercorns and made a pickling liquid. And then I mandolin’d some carrots into strips and added them to the jar with my sweet jalapeño slices. And I added the pickling liquid over the carrots.
